Thai Green Curry Chicken with Baby Bok Choy and Brown Rice

 

As a variation on my usual Thai green curry...

...I sliced up some baby Bok Choy, and added it instead of the usual green peas or lima beans, then substituted the turkey tenderloin with some chicken breast poached in that aromatic coconut milk/chili paste sauce...

Not the same.  But a very successful experiment... and not geographically incorrect either!
