"Indian" Sweet Potato and Kielbasa Curry

 

Yes...  Really...  I just said "Indian" and "Kielbasa" in the same breath.

I was given some kielbasa.  I had some sweet potatoes.  I had onions and garlic and ginger.

What the hell...  Let's visit India!

Brown-fry 4 small onions (sliced in thin strips), and then add tons of minced ginger and minced garlic, along with salt, pepper, your favorite curry blend (I used my own homemade), and a few pinches of ground cumin and coriander... Simmer a while longer to heat and cook the dried spices, but make sure the garlic doesn't brown.  Stir in some stock.

Nuke two peeled and (large) diced sweet potatoes in water until they just start to soften.  (Check them frequently!  Mine took about 7 minutes, but it will depend totally on the size of your dice and the power of your microwave.)  Then drain and sauté them until browned a bit and add them to the onion mixture.

Slice some kielbasa into rounds, sauté them until browned on both sides and add them to the onions and sweet potatoes.

At this point, I stirred and decided I needed a bit more stock... Simmered the whole mixture...  Served it on rice...  Topped with sour cream.

If sweet potatoes sometimes seem too sweet for you, or if the idea of seasoning them with "pumpkin pie spices" turns you off as it does me, this will give you a whole new way of seeing (and eating) them.

No, not really Indian.  I mean.. KIELBASA... seriously???

But Oh So So Good... And so easy to vary:  add any vegetables that sound good... or hot sauce... or more curry... or less curry...

You get the idea.

And on a frigid night, your body and soul and immune system will thank you!!!
